Adding veggies to your breakfast or lunch does not have to be difficult, hence this recipe! It not only fills you up, just try it and you will soon be adding this recipe to your all time favorites. I am not a fan of cold breakfasts, my stomach does not do well on eating something cold in the morning. This recipe is so easy to make and takes only a couple of minutes.
Serves 2
Preparation time: 10 minutes
You need:
150 g frozen spinach leaves
2 tomatoes
2 tbsp. oil
4 eggs
Pinch of pepper and salt
Preparation
1. Defrost the spinach in a small pan with lid on a low heat.
2. In the meantime, dice the tomatoes. Heat a pan with oil and fry the tomatoes for 2 minutes.
3. Beat the eggs in a bowl, add the spinach and mix it well.
4. Pour the egg mixture over the tomatoes.
5. Fry the egg on medium heat and flip after 4 minutes and fry the other side for 1 minute.
6. Season it with some salt and pepper.
Tip:
This recipe is low FODMAP, gluten free, low in fructose and lactose.
If you leave out the gluten free bread you can use it during the SIBO diet as well.
