A super budget friendly recipe for lunch or dinner, I paid approximately 5,60 USD / 4,30 GBP for 4! The recipe is suitable for the low FODMAP diet, it is gluten free and you can make it dairy free as well!

What you need for four people:
250 g of Basmati rice
4 medium sized eggs
250 g carrots
150 g fresh green beans (= 35 g p.p. is low FODMAP)
150 g of sliced white cabbage (= 35 g p.p. is low FODMAP)
1/2 cucumber
For the gadogado sauce:
50 g of sunflower seed paste or peanut butter paste
50 ml of milk (optionally, lactose-free, or plant based)
2 tbsp (gluten-free) soy sauce
pinch of ginger powder
Ready in 20 minutes:
Cook the rice in accordance with the instructions on the package. Boil the eggs 8 minutes and cut in half. Cut the carrots into thin slices, remove the tips of the green beans. Cut the cabbage into small pieces. Boil the carrots, cabbage and beans al dente in 7 minutes. Drain and wash with cold water.
Meanwhile, cut the cucumber into cubes.
For the gado gado sauce you put all the ingredients in a saucepan and heat over medium-high heat. Add water if the sauce is too thick.
Divide the vegetables and eggs on plates, pour the sauce over it. Serve the rice.
Do you go for the instagrammeble culinary look? Press the rice in a lightly greased bowl and turn it to the board. Voilà!

Do you have a peanut allergy? This sauce is also delicious with sunflower seeds paste!
